Recipes

So, Shelley requested the recipe for the Tres Leches cake and the truffles, which by the way can be made into whatever you would like.
The Tres Leches cake recipe was from the Pioneer Woman Cooks website, so here's the link.

The recipe for the truffles is as follows:
1 package of oreos, crushed
1 package of cream cheese, softened
Then, for the chocolate you can either use two bags of white chocolate chips or 2 pkgs of semi-sweet baking chocolate squares.
You then combine 3/4 of the oreos and the cream cheese, roll them into half inch balls and dip them in the chocolate. Once they have been dipped thoroughly put them onto a baking pan covered with wax paper and let them dry. You can then either sprinkle them with the leftover oreo or decorate them some other way.

"Holy Ghost" Oreo Truffles and Tres Leches Cake

I made little "Holy Ghose" oreo tuffles for the girls I visit teach. I thought they turned out very cute and very yummy. They were very easy to make too, and then I wrapped them up and found a cute little poem on the internet about the holy ghost and halloween. 
 Miranda requested Tres Leches cake for her birthday so I made it on Thursday since I had to go up north on Friday and wouldn't be here for her birthday on Saturday. It was delicious!

New Job!

I finally got a job! It's at the Cedar City Comfort Inn. Despite the fact that I work mornings at 5:30, it is a job. I hope to find a different job soon with better hours, but this will have to do for a little while. There's not much going on in Cedar City as of late. Hopefully we'll be more entertaining next time.

First Day of College!



Today was my first day of classes at SUU. I only had 3 classes because my Sociology class was cancelled for the day. It was definitely weird walking across campus to each class, but SUU has a beautiful campus so it's a pretty walk. It's also different having to search for a parking spot just to go to school. We all know Emery High has a plethora of parking spaces available. Altogether, I think I'm going to like SUU and have a fun time in Cedar City.

Caramel Apples

Today we made White Chocolate Cinnamon Caramel Apples.. They were really good. The girl in the picture is Jessica. She is the friend that I do all of my baking with. Tonight was our last night to bake before we both are gone.

Baking

A friend and I are determined to open up our own baker when we're done with college, so every Tuesday we bake something different. Usually it's cupcakes, but this week we made no-bake cookies, which doesn't really count as baking, but it's still a lovely treat. I alone have been baking something new at least once a week. This week I made two different things. First, I made Eclairs with vanilla pastry cream and chocolate drizzled over the top. Second, I made Banana Layer Cake with Cream Cheese frosting. They were both mighty tasty. Some other things that I have made are Peanut Butter cupcakes with Chocolate frosting and a reese's on top, S'more Cookies, Chocolate Reese's cupcakes with Peanut Butter frosting, and Oreo cupcakes with cream cheese frosting.  
These are the finished Eclairs. They look like cream puffs, but I used the eclair recipe. I didn't have the right tip for the icing bag so I just plopped the dough on the pan and hoped it would work. I guess it did!



This is the Banana Layer Cake. I really like the cream cheese frosting. As for the cake, I haven't tried it yet, but I'm assuming it's good because my dad and Greg are just finishing up their second pieces.

Kittens!



A couple of months ago we "adopted" a cat, now named Bianca, who over the months got fatter and fatter and we quickly discovered she was prego. One day she suddenly became the Biggest Loser and got super skinny, so putting two and two together we figured that she had had the kittens. Well, today as dad was going to work he started backing out and heard some faint "meows" he got out of his truck and running across the road was Bianca with a little orange kitten. He brought it inside and we played with it for a little while and dad started leaving again (or so we thought) and then came running in a few minutes later with two more kittens and told us that there were more across the street! We ran over and found three more kittens! Six kittens (mom says we can't keep them, but we all know she has a soft heart for kittens) in all! They're so cute!
